Description

Most of the apricots we dry in Rahimabad Valley are left exactly as the sun leaves them: dark, dense, and intensely sweet. This variety is the exception. These are the tangy khubani, ترش خوبانی, picked from a different character of fruit than our sweet varieties, and finished with a light sulfur treatment that keeps their color a bright, translucent orange and their texture soft enough to eat straight from the bag.

Sulfuring is not a Hunza tradition. It is a standard preservation method used across the dried fruit industry worldwide, and we use it deliberately for this one variety because it does two things our sun-only drying cannot: it locks in that vivid orange color instead of letting the fruit darken with age, and it keeps the flesh soft and pliable for much longer, which matters if you are buying in bulk, cooking with it, or just prefer a chewier bite over the firmer texture of our organic khubani. If you want the fully traditional, unsulfured version instead, our organic knife-cut and rough-cut apricots are both dried the old way, with nothing added.

Sulfur dioxide (E220) is added to this batch in a small, controlled amount, in line with 1500mg/kg limit. Sulfites are a recognized allergen, so if you have asthma or a known sulfite sensitivity, please choose our unsulfured khubani instead or check with us before ordering. For most people, the compound is broken down and cleared by the body without issue, and its use here is regulated and limited by design, not an unmeasured additive.

What you get, day to day, is a soft, tangy, ready-to-eat dried apricot that holds up well over weeks in your pantry. It works well straight as a snack, torn into oatmeal or trail mix, or stirred into a chutney or compote where a firmer, unsulfured apricot would take longer to soften. The tang comes through more in this variety than in our sweeter organic cuts, which makes it a better match if you’re after something closer to a dried sour cherry than a dried fig.

Like every product in the Hunza Foodways range, these apricots are hand-sorted and hand-packed in Rahimabad Valley by the women producers we work with directly. The processing method is different from our organic line, but the sourcing, the hands, and the valley behind it are the same.
